Evil Burger with Chili Aioli



800g Ground Beef
Salt + Pepper
Evil Chef´s No1
Bacon

Mix the ground beef with spices, shape and press into burgets. Grill the burgers and bacons. Top the burger with cheese and bake in the oven 190°F until the inner temperature is 62°F.

Chili Aioli
1 Free range Egg yolk
1 tsp Dijon mustard
1 tbs Apple cider vinegar
3 dl Oil
1/2 finely grated solo garlic
Salt + Pepper
Lemon
Evil Chef's No1

Put egg yolk, mustard, vinegar, garlic and spices in a bowl. Whisk until the texture is like mayonaisse by adding a thin drizzle of oil at a time. Season with chili sauce and salt.

Steak Fries
4-5 large Potatoes
Oil for frying

Cut the potatoes in large sticks, rinse in cold water. Pre-fry in oil at 140°F until soft. Then fry at higher temperature (190°F) until crisp.

Garnish
8 slices tomato
8 slices cucumber
Nice crispy sallad
Sliced red onions
4 slices white bread



Evil Con Carne


1 kg of suitable fatty meat
1 tsp Tomato puré
1 Yellow Onion
4 Carrots
2 Garlic solo
1 dash of white wine
5 dl tomato pulp
1 l of Chicken broth
2 tbs Cumin
3 dl mixed beans
2-3 Bay leaf
1 dried Pasillo Negro Chili
1-2 st Fresh chili like Habanero or Naga Jolokia
Salt + Pepper

Cut the meat into cubes and sautée in a large pan. Add white wine and let it reduce in half. Add chopped onions and garlic and carrots in larger pieces as well as spices, tomatoes and broth. Simmer slowly under lid until the meat is tender. Rinse beans and add, and season with salt, black pepper and Evil Chef's No1.





Habanero / Pineapple / Limegrass Sauce


15-25 pieces Yellow Habanero
4 stalks of Lemongrass
1 Garlic solo
2 Shallots
1 Lemons (zest and juice)
1 tsp Ginger
1 tbs salt
3 dl water
1 dl vinegar
1 half fresh Pineapple

Finely chop lemongrass, garlic and shallots and sautée in some oil. Wash and split the habaneros and add to the pan together with all the other ingredients. If you prefer a lesser Evil sauce you know what to do. Bring to a boil and let simmer for 5-10 minutes. Blend the suce smooth and let cool before pouring into bottles.
